Kikuichi Gyuto Western Style Chef's Knife

Kikuichi Western Collection Western style knives made in Japan feature hard thin blades which provide some real advantages in knife design.  The hardness of the steel allows these blades to take and maintain a sharper edge.  The thinness of the blades reduces weight so the knife is lighter and helps reduce fatigue.  Also only a small bolster is required to bring the knife into balance and that makes maintenance of the edge easier because there is no full bolster in the way like with many forged European knives.  Finally, one can purchase a longer blade with all the benefits that provides without making the knife heavy and hard to manipulate.
