Kikuichi Shiroko Kasumi Collection Traditional kasumi construction involves forge welding a piece of hard hagane steel to a piece of soft steel or iron. This construction utilizes a thinner piece of hagane which not only saves money but also makes the knife easier to maintain. This professional grade series uses shiroko or white steel for the cutting edge forge welded to iron. These knives are not stainless steel. They will discolor.
