Traditional kasumi
construction involves forge welding a piece of hard hagane
steel to a piece of soft steel or iron. This construction utilizes a thinner
piece of hagane which not only saves money but also makes the knife easier
to maintain.
This professional
grade series uses shiroko or white steel for the cutting edge
forge welded to iron. These knives are not stainless steel. They will
discolor. Handles are Ho wood and ferrules are water buffalo horn. Wood
sheaths are included.

The deba features
a very thick and heavy single bevel blade and is the traditional knife
